Pitmaster Class – Calgary – March 23rd (Kris)

DETAILS:

Join us for a half day of instruction and some awesome food. This class is targeted at the beginner through intermediate BBQ’er, and we will learn all about true, low ‘n slow, Southern-style Barbecue

We will be cooking throughout the class and we will have our award winning food for you to try, a detailed handout for you to take home.  Class is held indoors, with several topics covered outside – so please dress accordingly. We will cover:

  • Preparation of 4 meats – Brisket, pulled pork, ribs, and chicken. We will teach you how to select, trim, season, and cook these meats.
  • BBQ rubs, mops, sauces, glazes, etc.
  • Cooking fuel (charcoal, pellets, etc) and wood selection – seasoning with smoke
  • “Low ‘n Slow” in theory
  • Equipment – all types smokers and grills for cooking real BBQ
  • Basics of Competition – requirements, entry guidelines, judging, etc.
  • Lots of stories from the BBQ trail

Smoked Cranberry Sauce (the only can used in this recipe is our Gateway Drum!)
 
Smoked Lamb – My 2019 resolution…eat more lamb!  This is a great alternative for your Easter table. 
 
Texas-Style Turkey – Not your momma’s dried out turkey, that’s for sure!  We’ll focus on a Texas-style smoked turkey breast that’s moist and sure to please!  
 
Bourbon-glazed Ham – Bourbon and BBQ Pork…need we say more?

Bacon-wrapped stuffed tenderloin – This is one of our most famous dishes that earned us the title of “Calendar Boys” a few years back!

Sometimes, you just want snacks for the game, party, or celebration. This is the class for you. We’ll cover recipes that are simple and quick, and will wow and amaze your guests!  Or, just make them for yourself, I won’t judge…much…
 
We’ll enjoy the following:  
 
ABTs – The classic BBQ treat, Atomic Buffalo Turds!  Jalapeños stuffed with a mix of cheeses, wrapped in bacon, and smoked or grilled until crispy and melty!  
 
Toink Balls – A twist on good ole Moink Balls (beef meatballs wrapped in bacon) using turkey with an Asian twist!  
 
Smoked Deviled Eggs – Deviled eggs themselves are under-rated, this version will blow your mind!  The flavor gets ramped up and we’ll garnish with a little leftover pulled pork…you know, just for fun!  
 
Smoked Queso Fundido – hot, melty cheese with sausage?  Yes please!  We’ll be making our own chorizo to compliment this Tex-Mex classic before hitting the smoker to bring everything together!  
 
Twice-Baked Planked Potatoes – you’ve probably planked salmon before, or maybe planked in the gym, but you haven’t planked potatoes!  These are a great way to add flavor to everyday mashed potatoes and present them in an amazingly eye-catching way!
